Houston's cocktail renaissance isn't coming. It's already here.

We sat down with eight of the city's most inventive bartenders to taste, talk, and pour. The result is a portrait of a bar scene leaning into Texas terroir while borrowing freely from every immigrant community that calls this city home.

At Anvil Bar & Refuge, beverage director Alba Huerta serves a milk-washed Old Fashioned that has become the gateway drug for Houston's clarified-cocktail obsession. Across town at Tongue-Cut Sparrow, Linh Pham pours a Vietnamese-coffee Negroni built around chicory-roasted condensed milk.

The drinks are inventive. The hospitality is, somehow, even better.
